Vegetarian Tacos

Vegetarian and packed full of veggies and protein. These tacos are a big hit in my house and so easy to make. This recipe fills 12 taco shells with plenty leftover for a burrito or nacho lunch the next day. Can easily be made vegan by using vegan cheese and vegan mayo.

I always get my organic green lentils and black beans in cartons from Sainsbury’s as I find they are really fresh and so easy to cook. You can also use dried green lentils but will have to soak beforehand so a carton is good to cut down on some prep time.

Ingredients

  • 12 pack of Old El Paso taco shells

  • 380g carton of organic green lentils

  • 380g carton of organic black beans

  • 400g of chopped tomatoes

  • 12 x cherry tomatoes (quartered)

  • 1 avocado

  • 1/2 red onion

  • juice of 1 lime

  • salad of your choice (iceberg, mixed bag etc.)

  • grated cheese

  • mayonnaise

  • handful of chopped fresh coriander

  • hot sauce (optional)

  • 4 x red chillies (optional)

  • salt

  • pepper

  • smoked paprika
